Sheet Pan Chicken Fajita Casserole (keto, low-carb) w / Cauliflower Rice | Whats for Dinner
Instagram https://instagram.com/@therecipetherapist Facebook https://www.facebook.com/ Ingredients: 2 pounds of boneless, skinless chicken thighs 2 tbsp. of olive oil 1 large red bell pepper sliced into small strips 1 large onion peeled and sliced into small strips 8 oz. of cream cheese, softened 8 ounces of shredded cheddar cheese 2 tbsp. of fajita or taco seasoning salt and pepper to taste Optional – jalapeño peppers and sour cream Instructions: 1. Preheat oven to 350° - put chicken in a large sheet pan that you’ll be using for this dish. Sprinkle with salt and pepper. Cover it with foil and bake until cooked to 160°, about 30 to 40 minutes. Let cool and then shred or chop into bite-size pieces. Drain liquid or juice from the casserole dish and save for another recipe. 2. Meanwhile, in a large skillet, coat with 2 tablespoons of olive oil on medium low heat, cook the onions and peppers until they are golden brown and soft. It’s called caramelization. It takes about 30 minutes. Give them a stir every 5 to 10 minutes. When done let them cool to room temperature. 3. In a large mixing bowl, mix the softened cream cheese, 1/2 of the shredded cheese and fajita or taco seasoning until well combined. Then add the chicken and cooked onions and peppers. Put back into the same sheet pan you used to cook the chicken in. Sprinkle with the remaining cheese. Bake at 350° for 35 to 40 minutes. Garnish with chopped jalapeño pepper and sour cream. Serve with cauliflower rice and sliced avocado. *Note: you can refrigerate this up to a day or two before making. Cauliflower Rice 1/2 cup chicken stock 2 tbsp. of coconut amino‘s or 1 1/2 tsp. soy sauce 16 ounce bag of rice cauliflower 1 tbsp. of olive oil 1 tsp. chili lime seasoning ( got mine at Trader Joe’s ) * cilantro for garnish Salt & pepper to taste Instructions: Heat oil in a large skillet on med heat- add the cauliflower rice and sauté for 2 minutes- turning until they begin to soften. Then add the rest of the ingredients. Cook for 6-8 minutes and top with fresh cilantro!
